Green Eggs & Ham
The "Green Egg" Part...
There are approximately 100 laying chickens at the ranch. Chickens free range during the day and are kept in the coop at night. We feed a non GMO soy free feed as well as clabber. Eggs are available @ the ranch by appointment. $6 per dozen. In addition to "green" eggs, your dozen may also have white, chocolate colored, and light brown eggs. We will let ya know when we find a hen that can lay golden eggs. :) The "Ham" Part... Pastured, organic feed and milk fed, heritage breed (Berkshire) pigs. NO GMOs, NO added hormones, NO antibiotic feed, NO small confinement. How does it work? Your $100 non- refundable deposit allows us to purchase a pig just for you. We then raise the pig on our ranch until it is time to take it to the butcher. At that time we will collect our final payment from you and transport your pig to the processor in Muenster, Texas. You will work directly with the butcher to select the cuts and packaging for your pig. You will be financially responsible for your processing expenses. You pay us for the pig and the processor for the processing. Costs and Cuts- Costs vary season to season. Below is our estimated cost/ expenses-

Ham- fresh, cured, smoked, steaks
Shoulder and Loin - pork chops, center cut loin and rib chops, roast, tenderloins, boneless butterfly pork chops.
Boston Butt- pork steak, roast
Ribs- spare ribs
Bacon- fresh, salt pork, smoked
Sausage- many different options- ground, breakfast spicey, smoked, brats, linked, German
Other- soup bones, lard, jerky,etc.
Our last personal pig produced-
14 Porkchop packets (6, 1 inch thick porkchops per pack)
15 Bacon packets (1# packets with 15 slices of bacon in each)
2 4# roast
2 hocks (great for soups)
4 10-11# hams (also have the option of getting ham cutlets, which are nice for making a pork version of Country Fried Steak)
11 Bratwurst packets (1.5-2# packages)
13, 1# packages of Breakfast sausages
8 Ockerfest packages (1 lb. 11 ounce packages) (more roast can be made in lieu of brats, / sausages)
2 racks of ribs
2 bone in packs (similar to spare ribs)
Lard (for cooking)
Other parts are available that we chose not to keep.
